Roasted Crispy Chickpeas

Roasted chickpeas are a great healthy snack! They don’t contain a lot of fat or sodium but are still crispy and flavorful. Chickpeas are rich in protein, fiber, and other nutrients. Unlike many canned vegetables, canned chickpeas retain much of their nutritional value and are comparable to dried cooked versions.

*serving size: ½ cup of chickpeas
Materials
Rimmed baking sheet
Parchment paper
Measuring spoons
Wooden spoon
Colander/strainer
Ingredients
1 15-ounce can of chickpeas
1 tablespoon olive oil
½ teaspoon salt
1 teaspoon seasoning of your choice (chili powder, curry powder, smoked paprika, or other herbs and spices)
Instructions
Preheat oven to 400 degrees Fahrenheit.
Drain the chickpeas and spread onto a parchment-lined, rimmed baking sheet.
Pat the chickpeas dry using a clean paper towel.
Add the olive oil and salt to the chickpeas.
Toss with a wooden spoon or with your hands, mixing until the chickpeas are well-coated.
Spread the chickpeas out in an even layer.
Bake for 45 minutes. Halfway through, stir the chickpeas so they cook evenly. The chickpeas are done when golden brown and crispy.
Remove chickpeas from the oven and toss with a seasoning of your choice.
