Pumpkin Chocolate Chip Oatmeal Cookies

This cookie recipe was one of the favorites from last fall. It's always fun to try and make food around a holiday theme, and this particular cookie nails Halloween in both color and flavor. Furthermore, the instant oats and whole wheat flour in the recipe makes these cookies a great source of fiber, which helps improve digestion, satiety, and blood sugar levels.



Ingredients


- 1.5 cup instant oats

- 1 cup whole wheat flour

- 3.5 tsp pumpkin spice

- 2.25 tsp baking powder

- 0.5 tsp salt

- 3 tbsp coconut oil

- 1.25 cup pumpkin puree

- 1.5 tsp vanilla extract

- ¾ cup maple syrup

- Chocolate chips


Instructions


- Remember to always wash your hands! :)

- Preheat the oven to 325℉ and line a baking sheet with parchment paper

- Whisk together oats, flour, pumpkin spice, baking powder, and salt in a bowl

- Whisk together pumpkin puree, coconut oil, and vanilla extract in another bowl

- Stir the maple syrup into the bowl from step 4

- Combine the flour mixture and the pumpkin mixture

- Add the chocolate chips

- Scoop out the cookie dough onto the baking sheet - you can also add leftover chocolate chips on top!

-Make sure the flatten the cookies because these cookies won’t spread on their own in the - oven

- Bake for 11-14 minutes
