Microwave Pumpkin Pie

Red, orange, and gold hues in nature are one of the many reasons why we love fall. These colors are not only found in the changing foliage but also in seasonal fruits and vegetables – such as pumpkins!


In food, naturally occurring colors often indicate the presence of antioxidants. Antioxidants are molecular compounds that protect your body cells from harmful free radicals. The orange skin and flesh of pumpkins is rich with the antioxidant, beta-carotene. Not only does beta-carotene protect your body cells, but your body also converts beta-carotene to form vitamin A. Maintaining healthy vision and a strong immune system are both important functions of vitamin A.


This fall, make sure to continue to nourish yourself by loading up on colorful fruits and vegetables. Some great ways to eat more pumpkin include adding pumpkin puree to oatmeal or making pumpkin soup!




Recipe (Adapted from Gemma Stafford)

Prep Time: 5 minutes

Cook Time: 2 minutes

Total Time: ~7 minutes

Yield: 1 serving


Materials

  • Small bowl

  • Fork, whisking utensil

  • Mug

  • Microwave

  • Spoon

  • Measuring cup and spoons

Ingredients

  • 2 small cookies, crushed into 2 tbsps of crumbs (graham crackers, digestives, gingersnap cookies)

  • 1/3 cup (3oz/85g) pumpkin puree

  • 1 egg

  • 1 tbsp milk

  • 2 tbsps brown sugar

  • 1 tsp pumpkin pie spice

  • 1 generous pinch of salt

  • ½ tsp vanilla

  • whipped topping (optional)

Instructions

  1. In a small bowl, whisk together the pumpkin puree, egg, milk, brown sugar, pumpkin pie spice and salt until no lumps remain.

  2. In a microwavable mug add in your crushed cookies to the bottom.

  3. Pour into your pumpkin pie mix on top.

  4. Microwave roughly 1 1/2 -2 minutes, checking every 30 seconds. The top may look slightly damp but it will set as it cools. Cooking time is based on my 1200W microwave so your timing might vary.

  5. Carefully remove the mug from the microwave. Let it stand for a couple minutes to cool. Serve with whipped cream and enjoy!

  6. If not eating immediately, place or store in the fridge for up to 24 hours.
