Easy Nachos

The leaves are falling, the air is getting cold, and we’ve already had our first snow. But it’s never too late for a classic summer meal: nachos. Invented in 1940 just over the border from Eagle Pass, TX, nachos originally involved fried tortilla strips, jalapenos, and melted cheese. 80 years later, nachos still look pretty similar, but they often include chicken, beans, guacamole, sour cream, salsa, and other Tex-mex toppings. Nachos might not be the healthiest - they do contain a lot of fat and sodium - but they are definitely high in protein with all the chicken and beans. We hope you enjoy this taste of summer!


Recipe

Ingredients

  • Tortilla chips (or other chips in the house)

  • Shredded cheese (any kind, including dairy free)

  • Pre-cooked chicken (cold-cuts, rotisserie chicken, or leftovers)

  • Barbecue sauce

  • Salsa

  • Pickled jalapeños

  • Guacamole

  • Sour cream

  • Canned beans



Instructions

  1. Take chips and place on a plate.

  2. Add toppings as desired.

  3. Enjoy!
