Cowboy Breakfast Cookies

Cowboy cookies are traditional chocolate chip cookies to which oats, pecans, and coconut flakes have been added. They were popularized by former First Lady Laura Bush. There is a fun New York Times article which pits Laura Bush’s and Tipper Gore’s cookie recipes against each other in a “Presidential Cookie Race”. While we are sheltering in place, it might be hard to get all the ingredients for the original recipes. Our recipe is a simpler and lighter take on Laura Bush’s recipe. Instead of a traditional dough made with flour, eggs, sugar, etc., the “dough” is made from bananas, oats, and peanut butter. And of course, you can personalize the cookies by adding your own favorite toppings. We hope that while everyone is staying at home, you can find fun and comfort in this easy recipe.



Recipe


Prep Time: 8 min

Cook Time: 12 min

Total Time: 20 min

Yield: 12 servings*

*serving size: 1 Cookie


Materials

  • Baking sheet

  • Mixing bowl

  • Fork (for mashing bananas)

  • Measuring cup


Ingredients

  • 2 very ripe, medium-sized bananas

  • 1 cup of quick cooking oats

  • ¼ cup peanut butter (any nut butter or even sunflower butter will work!)

  • Coconut flakes

  • Roasted pecan pieces

  • Semisweet chocolate chips


Instructions

  1. Preheat oven to 350 degrees.

  2. Mash bananas with a fork in the mixing bowl

  3. Mix in oats and peanut butter

  4. Mix in coconut flakes, pecans, and chocolate chips

  5. Scoop cookies onto baking sheet (keep in mind that cookies will not spread)

  6. Bake 12-15 minutes

  7. Enjoy!
