Celebration Microwave Mug Cakes

Today we are making a funfetti mug cake to celebrate our last Food Lab meeting together! Mug cakes are a quick and easy way to make a sweet treat using only your microwave. Happy Holidays!


Recipe

Ingredients

  • 4 tablespoons all-purpose flour

  • 2 tablespoons sugar

  • 1/2 teaspoon baking powder

  • 4 tablespoons milk (or dairy-free milk)

  • 1 1/2 tablespoons flavorless oil (sunflower, vegetable or coconut oil) or butter

  • 1/4 teaspoon vanilla extract or peppermint or almond or coconut (etc etc etc) extract

  • 1 tablespoon Funfetti/winter/any sprinkles

Frosting

  • Marshmallow OR powdered sugar and milk

Directions

  1. In a microwavable mug whisk together the flour, sugar, and baking powder.

  2. IF USING BUTTER: melt in a separate bowl in the microwave for 30 seconds or so

  3. Add in the milk, oil, and vanilla and mix until just combined. Stir in the sprinkles.

  4. Microwave for roughly 45 seconds - 1 minute, or until firm to the touch (timing is based on my microwave which is 1200 Watts so your timing may vary).

  5. Make the frosting: if using marshmallows, then just top your cake with a marshmallow and microwave for about 10-15 seconds, or until melty. If using powdered sugar and milk, put ¼ cup of powdered sugar in a bowl. Add a very very small splash of milk or vanilla/peppermint extract and mix until the icing is smooth. Spoon over your cake.

  6. Decorate with sprinkles if desired!

  7. Take a picture with the food lab teachers, then enjoy your cake!
