Black Bean Brownies!

We know black beans in brownies may sound unusual, but these are fudgy and delicious while being healthier than normal brownies. The black beans provide lots of fiber and nutrients and the avocado is a great source of healthy fats. Additionally, the recipe doesn’t contain any flour, so you’ll be able to make it even if your grocery store is out of flour.


We know it might sound strange, but we encourage you to try it for yourself! You'll see that this recipe makes delicious brownies that don't taste like beans at all.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 12 servings*

*serving size: 1 brownie


Materials

  • Blender

  • Colander

  • Spatula

  • 8x8 or other baking pan


Ingredients

  • 1 - 15 oz can of black beans, rinsed and drained

  • 2 eggs

  • 1/2 of a large ripe avocado

  • 2/3 cup unsweetened cocoa powder (not hot chocolate mix!)

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 2 teaspoons pure vanilla extract

  • 2/3 cup brown sugar

  • 1/3 cup chocolate chips of choice Instructions

  1. Preheat the oven to 350 degrees and spray your pan with nonstick cooking spray.

  2. Place all the ingredients besides chocolate chips in the blender. Blend until completely smooth—make sure there are no chunks!

  3. Using a spatula, add the chocolate chips and fold them into the batter.

  4. Pour the batter into the pan and spread it out. If desired, top with more chocolate chips, nuts, or peanut butter.

  5. Bake for 25-35 minutes or until set. Let cool, cut into squares, and enjoy!
